EB3 (Rest of the world) moved Significantly this time (more than a year) .. That was a big jump. Congratulations !

Since you have a Lawyer, he/she will tell you what needs to be done when you are about to file I-485 but Let me answer some of your questions.

You'll need:
(1) Medical Examination. You'll have to fill up one form from USCIS for the medical examination and only doctors listed on the USCIS website can do that. They'll give you vaccinations (if you haven't taken those) and sign that form and seal it so that you can send that along with your I-485 package. You'll need that for all your family Members.

(2) You'll need other documents such as: Birth Certificate, Marriage Certificate etc for your family members.

 Yes if your wife is on H4 visa then she'll also be able to apply with you at the same time and will get approved at the same time. But there are instances where Primary (you) get approval first then after few days/weeks your wife (dependent).

About Leaving your company after Green Card: 
Well, I don't know why so many people want to leave company immediately after Green card when the company has done so much for you. You're getting green card because of that company and you want to leave immediately huh ? Everybody wants to move and make more money...It's all about Greed and greed kills people !

Well let's get back to the point. There's no specific rule that USCIS has provided that says you can't leave your employer after Green Card. Usually it's considered safe if you stay at least 6 months after you get your Green Card (180 days) with your sponsoring company. If you leave a company prior to that they might bring this up during your CITIZENSHIP interview.. That's why most people tend to stay at least 6 months after getting green card.

***** Few other notes ***

Since EB3 ROW has moved up significantly the demand for the visa will be high (in my opinion). They might keep the same date or maybe move up (2-4 months again ) in the next bulletin. But there's also a chance that the dates might retrogress if the demand is too high in Feb/March Bulletin. That's just my opinion.
