If she is non-nepali then go for an expensive "Pashmina" shawl (light coloured). This is an ideal Nepali gift to someone special. And do not forget to check the tag saying "Hand made in Nepal". She will be happy you will be proud. She will love it guaranteed!!! Don't forget to thank me later when she says "wow this is nice, wonderful ...".

Pashminas are overated (the market here is inundated with cheap Chinese knock-offs that apparently say "hand made in Nepal").  Listen, if she is a working professional, then go for something exclusive like tea.  I gave that to my boss during my intern years and she loved it (a big-wig at one of the major IBs), she still sends me holiday greetings every year (probably expecting something exotic again) and has been inviting me to her holiday party every year.  Also, make an exclusive/high-end story behind the box like I did:  eg: My tea box was a gift from the late king to my father.  To make it more authentic and appealing, make sure you buy one where the packaging on the tea is similar to something we normally see for high end-chocolates.  It should specifically say that it is "among" or "the finest tea in the World" and is should be in an antiquated wooden box to make it look original.  Since I gave the same years ago, I still can't remember the exact name of that brand of tea but I vaguely know that it was produced in the tea estates of Western Nepal  and could be found in many a high-end tea stores in and around Thamel.  All the best and hope you get laid!!

Thankas are the bomb...Get her the high-quality "gold" painted ones instead of any common replica out there.  Also depends which deity you would be choosing.  For me, I'd prefer Milarepa or the Medicine Buddha (where you could also provide a rich story behind their lives).

Below is the link to get these.  However, you'd end up paying half if you had someone ship it over from Nepal instead:
