You are a GC holder, that means your wife has every reason to stay in US with u and not return back. It's not what u think, its what the councelor thinks and that is what the councelor will think.
That does not mean she can't get the visa at all, as long as your wife can show few good reasons to return back to Nepal, she might get the visa. Not having applied for GC petition is not a valid reason.

If she could show that, she has a solid job in Nepal and not interested to immigrate to USA, thus not applying for immigrant petition, she could get a visa.

If you don't mind, why are you husband and wife living separately when you could live together?

Whether you have a job or not does not affect the chances of her getting the visa. Whethere there is a reason or not that she will return back to Nepal plays a major role. What makes her return back to Nepal, you should focus on those if you really like to increase her chances of getting the visitor visa.
