The art of cooking is something which is very special art given by his own effort and his willingness to learn and conquour the world of cuisine. I love food and the food culture. The reason i have started this topic is that i was a chef for 4 yrs. I love food and there is no much artistic side of it. I mean like picasso did with his painting u can do with the food.
The difference what pinch of salt and pepper and the garnishing with herbs makes is awesome.

guys i am trying to create nepali food culture and nepali cuisine guide. My main focus here is newari and thakali cuisine. There is so much diversity in food and it is so yummy. I want to bring the ppl concept on nepali food like as they do on thai, japanese, italian, chinese and indian food. I want to explore more from daalbhat and tarkari aachar. this is normally what everyone thinks when it comes to nepali food.
what happened to 84 benjan food cooked in palace. It is locked inside the palace itself. I want to know what were the 84 benjan consumed by the kings and queens. OUr food didnot get chance to explored coz of our hyporcirite society ruled by trynat chettri and bahun. i am chettri but what my grandfather did to other is not forgiven. wht he has done is going to be suffered by us. We chettri and bahun has brain washed king like hell.
if u look at france , food culture florieshed coz of Nepolean and kings. There creation went out for the public as well. They get appricated. Still in nepal there is no apprecation for chef. they are just bhanche.

Why feel guilty about what your ancestors did to Nepal? I know people hate me because I a RANA . I have nothing to say to them. I personally have not harmed anybody, so I careless. Let's not judge each other by these kinds of things. Do n't feel bad about who are, I think chefs are all cute. It is a great job. Just give your 100 % and I am sure you will conquer the world, regards from preeti rana.

moneyminded -

i have a request. please dont mix bahuns with chetris. they had nothing to do with the rana rule or current shah rule. you are above and beyond all of us. heard you are god bishnu' himself re. so what can lowly bahuns possibly have anything to do with you?

i dont think bahuns have ever ruled nepal ..... otherwise we might have had a different nepal right now. ie.a lot better one! not saying they are the only ones with brains, but.......seems like they become all the target of the jealous wannabes anyways.

preeti rana - i don;t think anyone will hate u because u r a rana. but if you act like a spoiled chamcham, then of course everything will say Yuck!

Thanks preeti rana for the compliments. I mean u dont have to be shy for what u r ancestor did. I mean u had a great guy called balkirshna sama who gave up his title for the ppl. Hey changed from rana to sama.I think it is big move what he has done.
The same way my grandfather use to be bahun and married to chettri. Then i became khattri. They had a guts to do this. We shuld be proud of it.

As far as concerned about your greek food.
i dont know where do u live.
The problem with the lamb roast is can u find some greek herbs in your place.

First get the lamb Shank( upper part of the lamb sticked to bone). I would marinate it whole nite with some salt, pepper or with some greek herbs. If u dont have greek herbs then add some dry oregano, basil or thyme on it. If u give a some splash of brandy or greek liquor called rakhi will be great coz it will add the flavour of star anish. I think it cool.
Then pre heat the oven for 20 min at the temp of 180 degree. Once u place the whole thing in the oven then put it to 180 and put timer for 45 min to 55 min. Check in time to time. When the meat goes crispy then take it out.
Then u can slice it into the size u want.
samething with potato too.
place the diced potato in tray with make sure u paint some butter on tray so the potato dont get stucked in tray. Just give it a bit of greasiness. Then add salt, pepper, extra virgin olive oil and add rosmary. Put it in oven. When the potato gets cooked and skin are bit hard with testure of brown.
simple.
