So, one day this week I ate pancakes for breakfast, lunch and dinner. Kind of gross, I know but they were so so easy to make and so so good. Pancakes – especially ones like the Betty Crocker Mix means you only need butter, milk, an egg and a pan – that’s it! And, one mix is good to make like 30. So, it’s easy to feed lots of people or in my case, it’s easy to feed yourself a lot. Since it was such a good deal I thought I’d share the recipe. Here goes:
Pour the mix into a bowl (half will do for two people) and crack an egg over it so it looks nice and pretty like this:
Dump some milk. I think the box said like 350ml but I’m in a Nepali kitchen and who has measuring cups? So I just kept pouring until I got this sort of consistency:
Now, this part isn’t in the mix manual, but seeing as our pantry was syrup-less and I was too darn lazy to go buy a bottle, I thought I could sweeten it up with sheer brilliance. We had some good chocolate with blueberry fillings. The blueberry was very flavor full so I chopped up a few pieces of the chocolate and mixed it into the mix. You can just put in chopped pieces of chocolate too. Give it a shot, don’t think you’ll regret.
May you could try fruits. I think I’ll try mashing bananas into the mix next – remember Jack Johnson’s beautiful beautiful “Banana Pancakes” song? Mmmmm
Once you got the crushed pieces of chocolate in there then you are ready to pour daru-fulls into the heated pan.
Again, because I had no syrup I needed the extra moisture. Hence, I generously buttered the pan prior to pouring the mix in. Be sure to refrain from overheating the butter. Warm melting butter always smells divine, but burnt is not as fantastic.
So, anyway, when you pour it in be sure to not get too excited. If you do (like me) you will flip it over too quick and it’ll be a mess. Wait till the raw mix on the face up start to boil thick bubbles ever so gently. Then only flip it over. Otherwise, you’ll be heartily disappointed.
Be careful not to wait too long as burnt pancakes don’t smell too fabulous.
Then, when you’ve got a generous stack, dig in! Though, if you’re like me you’ll eat one as the other one continues to be made. That way each bit is nice and toasty.

Since Valley Foodie can’t cook and hates to clean up after creating havoc in the kitchen while frying eggs in place of a “real meal” the only option she has is to explore and to eat.
